Some fun yesterday when the Chek TV Program Flavours of the West Coast came up to tour the Field Station and sample recipes for some great local shellfish with the Culinary Institute of Vancouver Island. Chef Debbie Shore brings her usual sense of humour and culinary awesomeness to preparing Geoduck clams above with host Chef Steven Walker-Duncan. Read on for filming shots and some food photos.
As always, the great thing about working with the Culinary Institute is involving their great students. Debbie brought two student assistants Amber (above sneaking some geoduck to try) and Jack (below).
Meanwhile our student crew stood back and drooled.
Brian Yip from Fanny Bay Oysters brought a selection of local shellfish for the chefs to work with (Thanks Brian!) and the results speak for themselves below. Tasting was even better than seeing…..
Mussels with grilled garlic scape pesto..
A trio of geoduck recipes..
Skewered Spot prawns in a Miso Hoisin broth with fresh chives on alder skweres
Fanny Bay oysters on the half shell with horseradish mignonette.
Thanks very much to Steve and the crew from Flavours of the West Coast, we can’t wait until this airs this fall.
